I was never one to buy into the "aftermarket claim" of needing a larger main due to a muffler swap.
The advice just does not often play out very well.
Described is an essentially stock '81 large valve engine –
Why change stock jetting ?
main – 160
needle jet – 2.66
jet needle – # 46-341
needle position - #3 (I have used #2 with better throttle response and economy on my engine)
idle jet – 45

BMW only offers one needle as being "correct" for that model, but Bing has many needles that will fit the carb.

and the BMW RM was my source for stock jetting.
I see that Bing identifies the same needle for the 1981 R100RS simply as "341".
241, 251, and 371 jet needles are also listed by Bing as used on other BMW models.
