I agree. Very nicely done. Very appealing.
But the luggage, also very nice, does it fit into the cafe' paradigm? Would one more properly label the bike as a sport tourer?

A beautiful custom job, whatever you call it.
However I don't think you can call anything with luggage and without clip-ons and rearsets a cafe racer - I grew up building these using Triumph engines and BSA or Norton frames and those were absolute requirements...
