If you want to purchase them in the USA - Chris at Eurotech motorsports is good to talk to. I am about to purchase a kit as well and he has been holding my hand as i come up with various concerns and questions.

With the new 1000cc Kit, am I likely to get more " Growl " from the exhaust?

According to MI (Motoren Israel) and Siebenrock the kit you purchased will give your heads at least 9.5:1 compression.
Make sure you run premium. Also, the pistons and wrist pins are much lighter than stock, which will give you a little more response and possibly smoother running. The difference between an R75 and an R90 is like night and day. You'll have an R100 (with smaller valves).....even so, you'll be grinning.
