The RS is sold, so now what?
This would be finding a 60's Honda CB77, tearing it all apart, fix, replace, find parts, paint, etc. Basically bringing old stuff back to working properly. If completed, it's a very nice small classic bike.
This is a Suzuki S40 with a kit from RYCA.
S40's can be found fairly easily in good shape. With the kit there is a some back/forth shipping (Canada and California) of the tank, rear wheel, and possibly the swingarm. The upside is building with newer modern stuff without bringing parts back from the dead.

What do you want to do with it?
The Honda will be WAY more work and expense - finding and buying parts, rechroming, etc., and you will end up with a true classic that you will want to take care of.
The Suzi will yield a cafe that is, at its base, a not very interesting and easily replaceable bike, so you will (or, at least, I would) feel comfortable throwing it around without a care.
So, I'd choose on that basis: which activity will bring you more joy?
The Honda will be WAY more work and expense - finding and buying parts, rechroming, etc., and you will end up with a true classic that you will want to take care of.
The Suzi will yield a cafe that is, at its base, a not very interesting and easily replaceable bike, so you will (or, at least, I would) feel comfortable throwing it around without a care.
So, I'd choose on that basis: which activity will bring you more joy?
