You cannot argue that with all of the effort to remove weight during the build, that using lowers with holes for crash bars would be in line with that goal.

Yes using the lowers with the holes for the crash bars are more in line with that goal. I can't imagine that would lower the weight that much, but they would be lower in weight.

or better yet a center stand AND sidestand. They clearly could have removed one.

Fairing can be duplicated in fiberglass cloth rather than the heavy and brittle stock cast resin/crap. The gas tank could be made of aluminum rather than steel for a great weight saving. It is a nice looking machine.
The amenities of stands, lights, turn indicators, mirrors, plates, and etc
would be superfluous on a track bike,
and there will be no doubt that the Ritmo RSR could be trimmed further if this would be the case. It is not.
Ritmo Sereno's design objectives were clearly stated from the onset:

... So do bear in mind that the RSR IS obviously, and certainly was designed to be – a street machine !
And assuming that Ritmo's existing changes satisfied the proposed weight reduction goal ...
Why eliminate more ?
The modified RS upper-fairing appears to have been accomplished in carbon fiber ...
(although my reading of japanese text cannot confirm this purely visual assumption)
... a little CF should also have been used to patch the damn crash-bar reliefs in the lower panels, IMNSHO.

Guessing, but just as the RB Racing "Black Hole" header of very similar design,
I'd put my money on a merge-collector that is offset slightly to allow drain-plug access.
